NEWARK, N.J.—TakePart went behind the scenes at AeroFarms to find out what it takes to run a huge vertical farm. The company has been harvesting crops—including microgreens and baby arugula—grown in high-tech indoor farms since 2004 and now has seven such facilities, with plans to expand to several new American and international locations in 2017.
